this makes nice colorful sunday brunch
pasta pepper frittata
1/4 c. olive oil
3 red bell pepper, cut in strips
1 green bell pepper, cut in strips
2 yellow bell pepper, cut in strips
1 onion , diced finely
3 cloves garlic , crushed
1 jalapeno pepper,seeded and minced or 4oz tin green chiles ,drained
4 sundried tomatos , minced
1 tsp. salt
1 tsp. balsamic vinegar
1/4 tsp fresh ground pepper
6 oz. cooked thin spaghetti
8 eggs
3/4 to 1 c. shredded provalone ,or whatever you like
1/2 to 3/4 c. freshly grated parmesan cheese
preheat oven to 350*
1. in oven-proof skillet heat oil add peppers,garlic,onion ,tomato and 1/2 salt cook till peppers tender about 8 to 10 min.stir in vinegar and 1/8 tsp pepper.add pasta and toss lightly . cook a minute.
2.in bowl beat eggs with left salt and pepper. stir in cheese . pour eggs over pasta and vegtables in skillet. cook over med heat till eggs start to set. about 3 min. top with parmesan cheese and put in oven.
3. bake about 10 min. or till frittata set in middle . remove from oven let set 10 min. loosen frittata from sides a pan and cut into wedges.
serve hot or at room temparture
can use whatever color peppers you can get

That sounds really good......remember to always wash your hands after cutting peppers!
