2tbsp. butter
2 large leeks,chopped
1 onion , chopped
1 potato, peeled,cubed
1 sweet potato, peeled ,cubed
2 c. cubed butternut squash
1 c. diced carrots
1 apple,peeled ,cubed
1 qt. chicken stock
1/2 cup light cream
1/4 tsp. fresh ground nutmeg
salt to taste
pepper to taste
1.saute onions and leeks in butter in a large soupot.
2. add potatos ,carrots ,apple and squash to pot and cook them a bit.
3.add broth and bring to boil, then turn down and simmer covered about 20 min. till all are soft.
4.puree in blender a bit at a time.
5. add the cream , nutmeg ,salt and pepper to soup.
6.simmer a bit and check seasonings to your taste.
7. ladle into soup bowls and top with sour cream ,chives whatever you like.
