limon bar cookies
crust 1 3/4 c. flour 1/4 tsp. salt 1/4 c. sugar stick a butter
preheat oven 400*
1. mix flour, sugar, salt and butter together. press into and a bit up sides a baking pan 13x9 bake 20 to 25 min. till golden.when done remove and lower temp to 375*.
while it baking make filling
filling
3 limes 2 lemons 1 c. sugar 1/8 tsp. salt 1/2 c . sour cream 5 eggs
confectionary sugar for dusting at end
1.grate a tsp.a peel from limes and a tsp. from lemons. squeeze 1/3 c. from limes and 1/4 c. from lemons.
2. in bowl mix sour cream ,with eggs, sugar and salt.add in juice and peel.
3. pour onto warm crust and bake for about 15 min. or till set dont over bake or will crack.
4. cool completely in pan , refrigerate until chilled.when cool sprinkle with confectionary sugar. store covered in fridge. makes about 32 cookies
