coconut shrimp
1 egg 1/2 cup all-purpose flour 2/3 cup beer 1 1/2 teaspoons baking powder 1/4 cup all-purpose flour 2 cups flaked coconut 24 medium to large shrimp,cleaned and shelled leave on tail if u want
1. mix egg, flour, beer ,baking powder in bowl.chill till ready to coat shrimp. 2. have flour in a bowl and coconut in another. 3. dip shrimp in flour shake off then dip into beer batter then into coconut. 4. place on a lined cookie sheet and chill. 5.cook either in deep fryer few min. or in frying pan for few min. turning once till shrimp cooked and golden brown.

the dipping sauce you heat up the preserves then blend in mustard and horseradish then chill. add mustard and horseradish till it suits your taste. also is good with orange marmalade or apricot preserves.
