now it March time for St. Patrick's Day stuff

2 1/2 to 3 lbs potatoes,peeled cubed i use yukon use what you like 6 to 8 slices bacon 1/2 head cabbage,chopped 1 onion, chopped 1 carrot shredded 1/2 c. milk,cream or sour cream your choice salt to taste pepper to taste 1/4 cup butter, melted can also use bag a cole slaw mix instead a cabbage carrot
1.Cook potatoes until tender. 2.Place bacon in a skillet cook till done. 3.remove bacon crumble and set aside. 4.In the reserved drippings,cook cabbage onion and carrot until soft. 5.Putting a lid on the pan helps the vegetables cook faster. 6.Drain the cooked potatoes, mash with milk and season with salt and pepper. 7.Fold in the bacon, cabbage,carrots and onions, then transfer the mixture to a large serving bowl. Make a well in the center, and pour in the melted butter. Serve immediately.
using the cole slaw mix a no no to me mama but i just dont tell her yummmy to have on st patricks day or also to top a shephards pie
