shepherds pie
2 lb ground beef or lamb 1 c. onion diced 1 c. carrots diced 1 c. celery diced 2 garlic clove minced 1/2 tsp. nutmeg salt to taste pepper to taste 1 can beef broth tomato paste or ketchup to taste 2 tb butter; mixed with 2 tb flour 1 c. frozen peas 2 lb potatoes; cooked and mashed butter
1. brown ground meat.drain. 2. add veggies and spices cook till translucent. 3.add broth and tomato paste or ketchup. 4.cook till veggies are tender but not mush.about 10 min. 5. make a roux a flour and butter and add to thicken the sauce. add peas. 6. pour thickened meat veggies and sauce into casserole dish top with mashed potatoes or colcannon.brush top with melted butter. 7. bake in 350* for about a hour till top golden and bubbly.
we add peas right before baking dont like them to cooked can add with rest veggies if want
