The easiest way to make queso is to melt one large brick of Velveeta Cheese into 2 cans of Rotel. For an added kick add browned sausage, chorizo or ground beef. This is easy and delicious and serve with your choice of tortilla chips! We like Doritos scoops becasue you get more cheese that way! I have a friend who browns the ground beef and adds a packet of taco seasoning before adding to the Velveeta and Rotel. It's really good!
