for hot wings.. just cook the wings and put in a pan and add Louisiana hot sauce or your fave hot sauce and thats close enough i think..for for ck strips or tenders.. first you take ck breast... trim it into strips.. flour it, then dip it in buttermilk then pack it in crackermeal, pat it down some with the crackermeal covering all.. then deep fry it.. it comes out perfect.. enjoy.. fast and easy to make.. onion rings and fried zuke are made the same way.. its just a double breading.. first with flour then crackermeal. you will do better if you pack it patting it down and compleatly covering it in the flour and crackermeal so it sticks better.. one hand wet.. one hand dry.. the onion rings made this way are fantastic... a tad messy but delish..i have made a zillion of all of them working in a restaurant before they are good..the secret is its all fresh not frozen... @->-daisyhubs.

12-15 wings. 1 freezer zip lock bag. 1 cup flour. 2cups vegetable oil. 2 cups peanut oil or sunflower oil. 1/2 tbsp garlic powder. 1/2 tbsp onion powder. 1/2 tbsp paprika. 1/2 tbsp smoked cayanne pepper. pinch salt. Franks hot Sauce.(Add regular cayanne pepper for heat)be carefull on amount.Can be overpowering. ------------------------------------------------ - Put dry ingredients in freezer bad.Zip close and shake. - Clean wings in cold water-drain in strainer and shake well. -Put wings 5 at a time in bag and shake intil generously coated. Heat oil- remember- DO NOT OVER HEAT OIL. Put coated wings in oil until brown and crispy.Place on paper towels to let oil run off.Then take paper towel to pat dry.Dry gently. Continue with the rest until done. -Take a bowl put wings in bowl shake hot sauce all over wings.Then put a plate over bowl and shake like crazy. YOU ARE DONE ENJOY. -We like sour cream to dip as this also cools mouth down from heat lol.

After you fry up your wings, make a sauce of one stick of melted butter and a cup of Louisiana brand hot sauce. That "sh**" is good, as the commercial says! It is really hot, but you will love it. Serve with Bleu Cheese or Ranch dressing as you prefer and celery. Don't forget the cold beer!!
I'm from Buffalo,N.Y. where chicken wings originated.A nd heres how we make them here. first off seperate wings from legs rinse and pat dry, then deep fry in peanut oil for 15 to 20 minutes.While frying make up hot sauce, use any kind of hot sauce(RED).Not barbacue sauce.if you want mild sauce mix melted butter 4 parts butter to 1 part hot sauce. For medium sauce use 2 parts melted to 2 parts hot sauce. For hot use 1 part melted butter to 3 parts hot sauce. I like to add a dash more of garlic powerd and cracked fresh black pepper to my sauce. after you combine butter to sauce and wings are done frying and have dripped dried. then put wings in large bowl and pour sauce over them and stir to coat well. serve and enjoy!!!!!!!!! hint make sure the wings are crispy before coating even if this means to fry longer. the wings won't be so soagy then!!!!!!!!!
btw we serve our buffalo style wings with a generous side of cut up celery and carrots and blue cheese. let me know who trys and loves them

l can't eat fried foods so we bake them at 400' 20 mins per side on a broiler pan so the fat drains. then put them up under the broiler for a minute or two so they get extra crispy. we sauce the same way tubby goes. mmmmmmmmmmmmm
