How do I keep the flour that falls off the chicken into the pan of oil from burning? By the time I'm down to the last few pieces to brown up the flour on the bottom of the fry pan is burnt. I see them on TV fry and cook the chicken through in the same pan on a stove top and they don't seem to have any kind of problem with it burning.

Buy a fry basket. It sits right in the oil and catches all excess flour and fry bits before they get stuck to the bottom of the pan, just empty it in between batches.
