Italian turkey sausage and white bean stew Makes: 4 servings Serving Size: 1 cup Preparation Time: 20 minutes Cooking Time: 30 minutes Ingredients: 1 tsp. olive oil 1 garlic clove, minced 1/2 cup diced green pepper 1/2 cup diced onion 1/2 cup diced celery 1 lb. low-fat Italian turkey sausage, cooked, casing removed, and sliced 1 tsp. dried oregano 1 tsp. dried thyme 1 tsp. dried basil 1 (14-oz.) can diced, no-salt-added Italian-style tomatoes in their juice 1 (15.5-oz.) can cannellini beans (or other white beans), drained
Directions:
Heat the oil in a large nonstick skillet over medium-high heat. Add the garlic, green pepper, onion, and celery, and sauté for 3 minutes. Add in the sausage and cook for about 5 to 6 minutes until browned. Add in the oregano, basil, thyme, tomatoes with their juice, and beans. Bring to a boil. Lower the heat and simmer, uncovered, for 10 minutes.
