This is a GREAT tossed salad recipe for special occasions!
10 Cups torn Romaine lettuce 1 Cup shredded Swiss cheese 1 Medium apple, cored & diced 1 Medium pear, cored & diced 1/4 Cup dried cranberries 1 Cup chopped cashews
Dressing:
1/2 Cup sugar 1/3 Cup red wine vinegar 2 Tablespoons lemon juice 2 Tablespoons finely chopped onion 1/2 tsp. salt 2/3 C Olive oil 3 tsp. poppy seeds
In a blender combine sugar, vinegar, lemon juice, onion, salt & olive oil. Blend well. Add poppy seeds & blend again. In salad bowl combine Romaine, cheese, apple, pear, cranberries & cashews. Drizzle with dressing & toss to coat. Makes 8-10 servings.
