5-6 chicken breasts, cooked and cubed 1 8 oz carton sour cream 1 can cream of chicken soup 1 box Stove Top stuffing mix (chicken flavored) 1 small can chicken broth 1 stick butter 1/2 to 1 stalk celery, very thinly sliced(optional) pepper to taste
Heat oven to 350.
Put cooked cubed chicken breast in a casserole dish. Mix cream of chicken soup and sour cream in a bowl with celery, then spread on top of chicken. Pour dry stuffing mix over the top. Pour chicken broth over the stuffing. Melt butter and pour over casserole. Bake 45-55 min, or until top is browned.
You can make it healthier by substituting 1/4 cup Smart Balance or Benechol for the butter, and using light sour cream instead of regular. Plus you can always offer to be on top that night and work some of it off if you eat too much of it!
