Taco CasseroleBroken taco shells are sprinkled in a baking dish and topped with a cooked ground beef-onion mixture containing taco seasoning mix, taco sauce, and green chilies. Refried beans and taco cheese are layered on top and baked.Ingredients: • 1 lb. ground beef • 1 small onion, chopped • 1.25 oz. pkg. taco seasoning mix • 3 oz. bottled taco sauce • 4 oz. can chopped green chilies • 1 cup water • 12 taco shells • 16 oz can refried beans • 2 cups taco cheese, shredded • 2 tomatoes, chopped • 8 scallions, sliced • Sour cream Method: Preheat over to 375. Grease an 11x17 baking dish. Cook ground beef and onion over medium heat until beef is brown and onion is soft. Drain; stir in seasoning mix, taco sauce, chilies and water. Cook over low heat for 3-4 minutes; set aside. Break half of the taco shells and spread them in a layer on the bottom of the greased baking dish. Cover with 1/2 of the meat mixture, then spoon 1/2 of the refried beans on top. Sprinkle with 1/2 of the cheese. Repeat layers. Bake 20-25 minutes or until bubbly and cheese is melted. Top with tomatoes and scallions. Serve with sour cream. Notes: You can use a taco dinner kit with hard shells in place of the taco shells, taco seasoning and taco sauce.
