2 1/2 to 3 lbs veal 1/2 c flour 1/2 tsp salt 1/8 pepper 1/2 c oil 1 to 2 onions,diced 3 green peppers sliced can use 1 yellow 1 red also with 1 green to make colorful 2 cans whole button mushrooms 1lb 4oz can tomatoes 1can green chiles drain sometimes my mama added it salt to taste pepper totaste sugar to taste hot fluffy rice
cut veal into bite size pieces. roll in flour salt and pepper mix.in hot oil saute onions until tender. remove to greased baking dish.saute veal till brown. place veal in with onions along with everything else. except hot fluffy rice. mix it up kinda break up the tomatoes some. cover bake 1 1/2 at 350* until fork tender. serve over fluffy rice
my mama used veal chops they were cheaper and cut the meat off the bones
