this is fast and tasty...the longer you simmer it the better it gets...even better the next day...also good as sloppy joe topping...serves 3 to 6 people dependin on hunger levels.
1 lb ground beef 1 lb ground pork sausage (hot ot mild) 1 medium onion chopped 1 tb vegetable oil 1 16oz can stewed tomatoes (reg or mexican style) 1 12 oz can of beer, water or chicken stock i tb cumin powder 1 tb chili powder 2 tsp garlic powder 1 tsp black pepper 1 tsp cayenne (optional, only if ya like it hot) 2 or 3 green onions chopped (for garnish)
in a big frying pan put in oil until medium hot. add the meat and cook until brown (about 10 minutes), drain off the grease. add onion and spices. cook about 5 more minutes on low heat. add tomatoes and beer. mix it up real good. let the mixture simmer slow covered for at least 30 minutes...up to 2 hrs. if at the end it's too soupy add a tb cornmeal cornmeal, take the top off and let it thicken up...only a few more minutes. spoon into bowls, sprinkle with some green onions. serve with crackers or tortillas or on top of buns on a plate for sloppy joes.
