v Pork Oriental (serves 6)
1 Tsp cooking oil 1 1/2 lbs lean boneless pork- into 1/2" pieces 1/4 cup water 1/4 cup packed brown sugar 2 Tsp cornstarch 1 can (20 oz) pineapple chunks- drained and reserved 1/4 cup vinegar 1 Tsp soy sauce 1/2 tsp salt 3/4 cup green pepper strips 1/4 cup thinly sliced onions Chow mein noodles or rice
In WOK- heat oil on med-high. Brown pork slowly. Add water; cover and simmer until pork is tender (1 hr?) May add more water. Meanwhile, in large saucepan- combine brn sugar and cornstarch. Add pineapple juice, vinegar, soy sauce, and salt. Cook over low heat, stirring constantly, until thick. Drain pork; add to saucepan along with pineapples, green pepper and onions. Cook 4 - 5 minutes or until veggies are crisp-tender. Serve over noodles or rice.
