BBW Recipes: Strawberry Cake

Strawberry Cake

One 18-1/4 ounce white cake mix
One 3 ounce box strawberry gelatin
3 eggs
1/3 cup vegetable oil
3/4 cup water
One 10 ounce box of frozen strawberries

Frosting-
1/4 cup margarine or butter, softened
1 pound box powdered sugar
One 10 ounce box of frozen strawberries

PREPARATION:
Preheat oven at 350 degrees F. Grease and flour 13 x 9 inch or 2 9-inch pans. Mix first set of ingredients except for strawberries. Beat for 3 minutes. Hand stir-in strawberries. Pour batter into prepared pan(s).

Bake for 35 minutes or until done. Cool completely before frosting.

For frosting: Cream butter and sugar. Add strawberries. I make mine a little thin so I can drizzle over the cake.

Strawberry Cobbler

3 cups strawberries, hulled
1/2 cup white sugar
1 TBLS Cornstarch
1 cup water
2 TBLS butter, diced
1 cup all purpose flour
1 TBLS white sugar
1 1/2 tsp baking powder
1/2 tsp salt
3 TBLS butter
1/2 cup heavy whipping cream

Preheat over to 400 degrees. Butter a 2 quart baking dish.

Combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thick and hot. (Sounds kinda sexy doesn't it~LOL). Pour mixture into the baking dish, and dot with 2 TBLS butter.

Sift together the flour, sugar, baking powder and salt. Blend in 3 TBLS butter. Stir in the cream. Mixture should be fairly soft. Spoon on top of berries.

Bake for 25 minutes.

Strawberry Bread

1/2 cup butter
3/4 cup white sugar
3 large eggs
1 tsp vanilla
2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 cup sour cream
1 cup chopped fresh strawberries
optional: 1/2 cup walnuts or pecans coarsely chopped

Preheat over to 350 degrees and place the oven rack in the middle position. Butter and flour the bottom and sides of an 8-cup loaf pan.

Beat the butter with mixer until softened. Add the sugar and continue to beat until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla.

In seperate bowl whisk together the flour, baking powder, baking sada, salt, and cinnamon. With the mixer on low, add the flour mixture slowly to the wet ingredients, after dry mixture is incorporated add sour cream, mix until sour cream is incorporated into mixture.

Gently fold in the chopped strawberries and nuts (if you want nuts in it).

Pour batter into prepared pan and bake until bread is golden brown and a toothpick inserted in the center comes out clean, about an hour.

Place on a wire rack to cool and then remove the bread from the pan.

Make 1 loaf.
