Fourth of July Pie
8 oz. cream cheese, softened 1 (14 oz.) can sweetened condensed milk 1/3 c. concentrated lemon juice 1 tsp. vanilla extract 1/2 to 1 c. strawberries 1/4 c. concentrated lemon juice blueberries banana
In large mixer bowl, beat cream cheese until fluffy. Gradually beat in condensed milk. Beat until smooth. Stir in 1/3 cup lemon concentrate and vanilla extract. Pour mixture into baked pie shell.
Chill at least 3 hours.
Slice strawberries lengthwise. Arrange "fallen domino" style in 1 ring around outer edge of pie. For next ring, add a single row of fresh (or frozen, thawed and drained) blueberries.
Slice a banana into 1/4 cup of lemon concentrate and drain.
Place banana slices as next ring. Add another ring of blueberries, then a little "mound" of sliced strawberries in the center.
There is a rack you can buy at your local store that the chicken sits on. One whole chicken 1 chicken rack 1 tablespoon lemon juice ( pour in beer ) 1/2 can beer or sprite works well. Put 1/2 can beer on rack and sit chicken on it. Coat chicken with dry rub and sprinkle some in the beer and on the inside. Use a small potato to seal in the neck. Cook on the grill or in the oven for about an hour and 20 min. In the oven cook at 400 degrees.
I use a dry rub Dry Rub (yields 2 Cups but keep indefinitely) 1 C sugar 1/2 C paprika 1/4 C Kosher salt 1/4 C celery salt 3 tablespoons onion powder 3 tablespoons chili powder 2 tablespoons cumin 2 tablespoons black pepper 2 teaspoons dried mustard powder 1 teaspoon cayenne pepper
It is the most delicious chicken you will ever eat.
