I had to go dig out my Mother's Recipe, I've made it myself a couple of times, I don't have a very big garden now, but finding this recipe I might have to hit the Farmers Market in my area and get the produce to make it this year. Hope you enjoy this one.
3 large onions, cut up 4 medium green tomatoes, chopped 4 medium green peppers, cut up 2 medium red peppers, cut up 2 medium carrots, cup up 2 cups green beans, cut into small pieces 2 cups small cauliflower flowerets 3 ears corn, cut kernels off the cob 1/4 cup pickling salt 3 cups sugar 2 cups vinegar 1 cup water 1 TBLS mustard seed 2 tsp grated gingerroot 1 1/2 tsp celery seed 3/4 tsp turmeric
Put all your cut up veges, corn and green beans in a non-metal bowl, Sprinkle with pickling salt an let stand overnight. I toss my veges in a food processor for about 10 to 20 seconds for a finer mix. When Mom was making this she was the food processer so her's was chunkier.
Rinse and drain the mixture. Put in a 10 quart kettle. Combine sugar, vinegar, water, mustard seed, gingerroot, celery seed, and turmeric, pour over vegetables. Bring mixture to a boil, boil 5 minutes.
Spoon hot mixture into hot clean pint jars, leave 1/2 inch space at the top. Make sure you don't have any air bubbles, wipe jar rims, add lids and rings. Process filled jars in boiling-water bath for 10 minutes. Cool jars on a rack and listen for the lids to pop while the jars are cooling, popping sounds ensure good seal. If you've never canned it takes a while for the jars to pop but you will definitely know when it happens.
