zucchini soup
2 lbs.sliced zucchini(about 5 small ones dont use large ones to seedy) 5 tbsp. finely chopped shallots (or finely diced onion) 4 tbsp. butter 4 c. chicken broth 1 1/2 tsp. curry powder or more if like spicey 1 tsp.salt
1.] melt butter in skillet.
2.] saute zucchini and shallots covered for about 10 min. stirring frequently to keep from burning. zucchini should be soft but not browned.
3.] in blender add half zucchini, half broth and spices blend 1 min. or so till pureed.
4.] repeat with other half zucchini and broth.
5.] combine both batches in souppot and heat if you want it hot .
