Peanut Butter fudge Ingredients: 2cups sugar 2/3 cup of milk 1 cup of peanut butter(Jiff is best) 1 tsp vinilla extract (optional)
Mix sugar and milk in medium pot on med/high temp stiring occassionally as you bring temp up to soft ball stage using candy thermometer (approx 240 degrees). Mixture will come to a boil and rise in pot, when temp is reached add peanut butter and optional extract and immediately blend together and pour into square pan or container of your choice. Let cool, cut and serve. Note: if temp is not reached mixture will not set and be like soft carmel with shine, if too hot mixture will set fast and crumbly with dull look. Be careful not to burn the milk and sugar as it is heated; but bring to boil med/fast otherwise the mixture will tend to evaporate and burn if too slow and long in the process...likewise will burn easily if brought up to temp too fast...you will learn with the pot and your stove what temp setting is right for you.
