2 tbsp. butter 3 yellow squash, sliced or zuchinni 1 lb. lean ground beef 1 onion, chopped 1 can diced green chiles 2 eggs, beaten 1/2 c. mayonnaise or sour cream 1 to 1 1/2 c. shredded Cheddar cheese salt and pepper to taste 1 c. crushed buttery round crackers
preheat oven 350* 1. cook squash in butter till tender. 2.cook ground beef and onions till no longer pink. 3. drain . add chiles. 4.in cassorole mix squash ,mayo and eggs together. 5. stir in ground beef mix 6.add cheese blend it in . 7.salt and pepper it to taste. 8. top with cracker crumbs bake about 25 to 30 min. till heated throu and cheese melted.
